Dill sprouts are an aromatic addition to meals and an easy way to add variety to your everyday diet. They have an intense, fresh scent and a delicate flavour typical of young dill. They pair beautifully with eggs, salads, sandwiches, soups, sauces, fish and meat dishes.
Sprouts are a natural source of vitamins, minerals and antioxidants. They contain, among other things, B vitamins, vitamin C, and valuable elements such as potassium, magnesium, iron and calcium. Thanks to their fibre and bioactive compounds, they support the body’s proper functioning and are an excellent choice for vegetarian and vegan cooking.
Growing dill sprouts is simple and does not require specialist equipment. The most important things are to use seeds intended for sprouting and to follow basic hygiene rules: clean containers, fresh (preferably boiled) water, and thorough rinsing.
For one tier of a sprouter or a standard jar (approx. 0.5 L), 1-2 tablespoons of seeds are enough. Rinse the seeds with cool water, then pour over warm, boiled water so that they are completely covered. Leave to soak for about 4-6 hours. After this time, drain the water, and the swollen seeds are ready for further cultivation.
You can sow dill sprouting seeds at home all year round. You will achieve the best results at room temperature, around 18-22°C. Place the container with the sprouts in a bright spot, but not in full sun—diffused light encourages even growth and reduces the risk of drying out.
Dill sprouts can be grown in various containers. Choose the method that is most convenient for you:
Sprouter - after soaking, spread the seeds evenly on one tier. Make sure they form a thin layer and have access to air. Rinse the sprouter 2-3 times a day with warm, boiled water, each time allowing the excess water to drain freely.
Jar - place the soaked seeds in a jar, secure the opening with gauze or a special lid with a strainer, and set the jar at a slight angle so the water can drain out. Rinse the sprouts 2-3 times a day by filling the jar with water and draining it thoroughly.
Shallow container - line the bottom with damp cotton wool, blotting paper or a paper towel and spread the soaked seeds evenly over it. Keep the base slightly moist at all times, and gently mist or water the container so as not to flood the seeds.
Regardless of the method, regular rinsing 2-3 times a day and thorough drainage are essential. Too much moisture and poor airflow encourage mould growth. The first roots usually appear after a few days, and depending on conditions, home cultivation of dill sprouts takes about 7-14 days. Ready sprouts have thin, green, aromatic shoots resembling very young dill.
If you notice an unpleasant smell, a slimy texture, or a fluffy white coating, the sprouts should be discarded and the process started again after thoroughly washing the containers.
Dill sprouts are ready to harvest when the shoots are well grown, intensely green and smell distinctly of dill. You can cut the sprouts with scissors or gently remove them from the container together with the roots. The seeds can be eaten along with the whole sprouts.
Before serving, rinse the sprouts with warm water and drain thoroughly. Excess moisture shortens shelf life, so it is best to gently dry them on a sieve or paper towel. Store ready sprouts in the fridge, ideally in a lidded container that is not packed too tightly. For the best quality, consume within 3-5 days.
Dill sprouts are exceptionally versatile. They are particularly suited to egg dishes (scrambled eggs, omelettes, egg spread), fresh salads, slaws, sandwiches, vegetable spreads, creamy soups, yoghurt sauces, fish and delicate meats. They can also be sprinkled over potatoes, groats, rice or vegetable bakes.
To preserve maximum nutritional value and the full aroma, it is best to add sprouts just before serving or towards the end of cooking. They also work wonderfully as a plate garnish, giving dishes a fresh, spring-like character.
