"Gagat" pattypan squash is an early variety of the common squash. Plants with strong vigour have a loose, bushy habit. Leaves are large, palmate with coarse hair on the bottom side. Numerous large, dark yellow blooms sprout from leaves' edges. The fruit take on characteristic, extraordinary shape, compared to wrinkle-edged plate, spaceship, corrugated bell, priest's hat or discus. Your imagination will bring you your own descriptions. Young, pale green fruit do not require peeling. They get darker with age and turn almost black. Inside it there is white, crisp, juicy and aromatic flesh that resembles cucumber in taste.
Pattypan squash "Gagat" is recommended for preparing soups, sauces, fillings, salads and even eating raw, as a low-calorie snack. Young, small fruit are ideal for putting into jars in homemade marinades. They can substitute pickled cucumbers. Fruit left in the field will grow into containers that we can bake with our favourite filling. Sliced pattypan squashes can be fried in batter or stewed. It also fits into Balkan letcho or hearty meat stew. A pattypan squash salad with olive oil and garlic will make a great, refreshing addition to a daily lunch.
