Garden pansy, here as a part of the Edible Flowers series, is one of the most popular border and balcony plants. Magnificent, colourful garden pansy flowers are edible and take on a sweet, slightly sour taste. You may use them in salads, pancakes, soups and with meat. Due to their great appearance they are predominantly used as garnishing of pastry and desserts. Large-flowered garden pansy are, just like their wild cousin, violet, used in curing cough, bronchitis and skin conditions. You may prepare a brew out of the blooms and greens or add them to a bath in order to milden skin itch and the pain.

Garden pansy seeds are sown in summer in a greenhouse or onto a seedbed. Seedlings are transferred to the permanent site in autumn or in spring next year. Plant the seedlings on a sunny or only partially shady border. You may also grow them in containers. These plants do not have any special soil requirements, however, it is important that the soil is not too moist. Harvest flowers in summer and use them fresh or dry. They will retain their value as long as you dry them in a aerated and dark place.
