Plants of the cultivar available in our store produce 6 - 10 pods that contain 3 - 6 kidney-shaped, large, flattened seeds. Young, pale green, not fully developed seeds may be eaten raw. The ripe ones can be eaten cooked, but we also suggest preserving them in jars or freezing. Broad bean seeds are not only a tasty, filling snack, but also have remarkable nutritional value. They contain vegetable proteins that are equally well absorbed as animal proteins. They are also a source of healthy carbohydrates, fibre, phosphorus, iron, magnesium, provitamin A and vitamins B1, B2, B9 and C.
