Pot marigold of the Edible Flowers series is a sturdy and extremely ornamental plant with orange blooms. Edible are the fleshy and slightly savoury-tasting petals and young leaves that you might add to salads. Pot marigold blooms are used since ages for curing skin diseases and wounds, as well as stomach ulcers. You may use both fresh and dried petals in the kitchen. They perfectly enhance the taste of sandwiches and salads. You may add them to sauces, soups and steamed dishes, as they excrete a pleasant aroma when heated. They can also substitute saffron in dying rice, butter, pancakes, whom they will give a beautiful, golden colour.

Pot marigold is very easy and undemanding in cultivation, so it would thrive in every soil, provided it is permeable and moderately moist. It would bloom all summer long until first frost on sunny sites. You may grow it on flower beds, in your herb garden or simply plant it in pots on a balcony in order to have it at your disposal all the time. Harvest the petals of freshly developed flowers. Use them directly or dry them in an aerated and dark place.
