Green barley (Hordeum) for cultivation in pots gives an alternative to bittercress and oat as a healthy green delicacy and decoration of the Easter table. Young barley shoots and leaves are a real vitamin bomb, containing provitamin A, B vitamins (including the rare B12), vitamins C and E, as well as magnesium, iron, calcium, phosphorus, kalium and zinc. Green barley seeds are sown into light, moist soil - standard pot soil with a dab of peat will work well. You do not need a sprouter to produce juicy green leaves that can be harvested within the first week of cultivation.
