Microgreens - Brown mustard (Brassica juncea) - young leaves with exceptional taste are an attractive and tasty addition to different dishes. Microgreens resemble the popular sprouts, but these plants are at a later development stage. In contrary to sprouts, they grow in soil and are harvested as soon as they have developed the first pair of true leaves. Their nutritional and medicinal value is far superior to sprouts. Young brown mustard plants contain large amounts of vitamins A, C, B1 and B2. They are rich in sulphur, phosphorus, kalium and iron. They display intense, slightly savoury taste and are a great addition to salads, sandwiches, meat and fish.
Cultivation of Microgreens at home is very quick and easy. Even a less experienced gardener will master it. Fill a shallow container or box with a permeable soil. Sprinkle the surface densely with Microgreens seeds. Place it in a warm and sunny place. The soil should be moist, yet not wet. Sprinkle the culture with water two times a day. After approximately two weeks the first true leaves should appear, what marks the ideal time for harvesting young brown mustard leaves and stems.
