Horse mint (Mentha longifolia) is a winter-resistant perennial plant growing 40-50 cm tall. Its dark green, hairy, long, spiky and extremely aromatic leaves are the edible parts. The aroma comes from the high content of essential oil. This also makes horse mint a popular spice for non-alcoholic beverages, drinks, liquers and teas. Leaves should be harvested before the plants bloom, because during this time they prove to be of the highest quality. Horse mint is also sometimes grown for spiky, pink inflorescences that are eagerly visited by bees. Therefore horse mint is a valued melliferous plant.

Seeds need to be stored in fridge for about a week before the direct sow, that usually occurs in May. After approximately 2 weeks young leaves need to be thinned so they grow in 40x40 cm spacings. Horse mint blooms in late summer, hence the harvest should take place between May and August.
