Caraway "Kończewicki", sometimes called meridian fennel or Persian cumin, is a fantastic spice, medicinal and decorative plant in one. This biennial develops an erect, tall habit of delicate feathery, bright green leaves. Its hollow stems are topped with umbels consisting of white delicate flowers. Caraway fits onto rustic borders, but can be grown in herb corners of the garden or in the middle of a vegetable garden.

Caraway is grown for seeds that are oblong, slightly curved and visibly ribbed. They strike with a very characteristic aroma. They are used as a spice or herbal medicine. Caraway seeds are most commonly used in cabbage dishes, meat dishes and sauces. They are also used in salads and for flavouring bread. In medicine caraway is considered an antispasmodic, expectorant and carminative agent. It works as an antidote for infants' colic and colds. Caraway is also a melliferous plant. Its young leaves may also add an interesting note to salads and soups. Use them in moderation, as they tend to dominate other spices.

Choose a sunny place for caraway cultures. Seeds need to be sown into the soil in shallow grooves 20-25 cm apart. It takes them 5-10 days to germinate. Regular weeding and soil-loosening is recommended. Caraway can also be grown in containers. Warm, fertile soils with a high calcium content suit this plant fine. The seeds are harvested the second year, when they become red-brown and can be easily peeled off the umbel. Collect them carefully as they flake off easily. Dry the crops thoroughly and store in paper bags or airtight containers.
