Salsify, which is a plant very similar to scorzonera, is a variety whose edible portion is its roots that grow 15 to 20 centimetres in length and 2 to 3.5 centimetres in diameter. The roots have a grayish-yellow skin and white flesh; they produce milky juice. Salsify roots are ready to be eaten after they have been boiled, while its young leaves are a delicious addition to salads.
Growing: sow the seeds in rows in 30cm spacings in April. Thin the plants in 5-10cm spacings. This variety is more drought tolerant than scorzonera; it grows best in deeply cultivated fertile soils.
