Microgreens - Red amaranth (Amaranthus) - young leaves with exceptional taste are becoming more popular as a component of a healthy diet, as not only amaranth grain contains wealth of valuable nutrients. Young leaves of this plant also contain plenty of vitamins and minerals. These young plants are harvested when they would have developed the first true leaves. Similarly to sprouts, you may grow them at home all year long. Microgreens supply us with important nutrients, of which they contain more than sprouts. Tender, juicy young red amaranth leaves have a subtle, nutty flavour. They will constitute a fresh, tasty addition to sandwiches, salads, sauces and other dishes.

Microgreens may be cultivated on a balcony or windowsill, hence they offer a great option to city gardeners. To start a culture, you will need a shallow container or a box and standard soil mixed with sand to make it lighter and more permeable. Microgreens seeds should be sown densely in a thin layer on the surface of soil. Sprinkle it two times daily with waer and provide with a sunny and warm place. Red amaranth will quickly develop leaves in such conditions and you would be able to harvest them in 2 - 3 weeks time.
