Dried wine yeast - Enovini BAYA - 7 g belong to a group of exquisite, noble yeast strains that may be used in a variety of ways. The Saccharomyces bayanus works particularly well in fruit and grape white and rose wines, including the sparkling varieties. It also proves to be indispensable in production of grain and flower wines. In contrary to the "wild" naturally occuring yeast, the refined strains show excellent resistance to high concentration of sugar, sulphur, tannins and carbon dioxide, hence they ferment well even in unfavourable conditions. The use of the proven Saccharomyces bayanus yeast will protect your wine from infections, as well as colour, taste and aroma loss. This noble product guarantee a magnificent bouquet, long shelf life and satisfying strength at up to 18% alcohol volume. This yeast works equally well both in the first and the second fermentation, standing for the excellent end result.

We offer refined, fluidly dried yeast that does not need to be activated, nor propagated prior to use. You only need to pour the yeast powder into a glass filled with circa 100 ml of lukewarm water, stir it thoroughly and let stand for 20 minutes. After that time pour the suspension directly to the ferment. Observing hygiene is of utmost importance here - the container used for yeast rehydration needs to be cleaned and sterilized before.
